To make classic chicken noodle soup, you'll need the following:

Chicken breasts or thighs
Carrots
Celery
Onion
Garlic
Chicken broth
Noodles (egg noodles or pasta work well)
Fresh herbs (such as parsley, thyme, and rosemary)
Salt and pepper


To begin, start by heating a large pot over medium heat. Add a tablespoon of olive oil, and then dice the onion, carrots, and celery and add them to the pot. Sauté the vegetables until they are soft, about 5-7 minutes.

Next, add minced garlic and cook for an additional minute. Then, add the chicken broth and bring the mixture to a boil.

While the broth is coming to a boil, cut the chicken into bite-sized pieces. Once the broth is boiling, add the chicken and reduce the heat to a simmer. Let the chicken cook until it is fully cooked and tender, about 10-15 minutes.

Once the chicken is cooked, add the noodles to the pot and continue to simmer until the noodles are tender, about 8-10 minutes. Finally, season the soup with salt, pepper, and fresh herbs to taste.
