Bamboo Biryani Recipe

Bamboo Biryani is a unique and delicious variation of the popular Indian dish, Biryani. This recipe combines the flavors of traditional biryani with the tender, nutty taste of bamboo shoots.


Bamboo Biryani Recipe

Ingredients:

1 cup basmati rice
2 cups water
1 tbsp ghee
1 bay leaf
1 cinnamon stick
2 cloves
2 cardamom pods
1 onion, chopped
2 cloves of garlic, minced
1 inch ginger, grated
1 cup bamboo shoots, chopped
1 cup mixed vegetables (carrots, peas, beans), chopped
1/2 cup yogurt
1/4 cup cashews, chopped
1/4 cup raisins
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric powder
Salt, to taste
1/4 cup fresh cilantro, chopped (for garnish)

Instructions:

  1. Rinse the rice in cold water until the water runs clear.
  2. In a pot, bring the water to a boil, and then add the rice. Cook the rice until it's half done, about 7-8 minutes, then drain and set aside.
  3. In a separate pan, heat the ghee over medium heat. Add the bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
  4. Add the chopped onion, garlic, and ginger and sauté until the onion turns translucent.
  5. Add the chopped bamboo shoots, mixed vegetables, yogurt, cashews, raisins, cumin powder, coriander powder, turmeric powder, and salt to taste. Mix well and cook for about 5-7 minutes.
  6. Add the cooked rice to the pan and mix well. Cook for an additional 5 minutes.
  7. Garnish with cilantro and serve hot.
