Ingredients:
1 cup basmati rice
2 cups water
1 tbsp ghee
1 bay leaf
1 cinnamon stick
2 cloves
2 cardamom pods
1 onion, chopped
2 cloves of garlic, minced
1 inch ginger, grated
1 cup bamboo shoots, chopped
1 cup mixed vegetables (carrots, peas, beans), chopped
1/2 cup yogurt
1/4 cup cashews, chopped
1/4 cup raisins
1 tsp cumin powder
1 tsp coriander powder
1 tsp turmeric powder
Salt, to taste
1/4 cup fresh cilantro, chopped (for garnish)

Instructions:
- Rinse the rice in cold water until the water runs clear.
- In a pot, bring the water to a boil, and then add the rice. Cook the rice until it's half done, about 7-8 minutes, then drain and set aside.
- In a separate pan, heat the ghee over medium heat. Add the bay leaf, cinnamon stick, cloves, and cardamom pods. Sauté for a minute until fragrant.
- Add the chopped onion, garlic, and ginger and sauté until the onion turns translucent.
- Add the chopped bamboo shoots, mixed vegetables, yogurt, cashews, raisins, cumin powder, coriander powder, turmeric powder, and salt to taste. Mix well and cook for about 5-7 minutes.
- Add the cooked rice to the pan and mix well. Cook for an additional 5 minutes.
- Garnish with cilantro and serve hot.
