Ingredients:

2 lbs boneless, skinless chicken breasts
1 cup plain yogurt
2 tbsp lemon juice

1/2 tsp paprika
1/2 tsp turmeric
1/2 tsp chili powder
salt, to taste
2 cups basmati rice
4 cups chicken broth
2 tbsp ghee or butter
1 large onion, finely chopped
2 cloves garlic, minced
1 tbsp grated ginger
1 cup frozen peas
1/2 cup chopped fresh cilantro
1/2 cup chopped fresh mint

Instructions:

  1. In a large bowl, mix together the yogurt, lemon juice, garam masala, cumin, coriander, paprika, turmeric, chili powder, and salt. Add the chicken pieces and stir to coat them in the marinade. Marinate the chicken in the refrigerator for at least 30 minutes, or up to 24 hours.
  2. Bring the chicken broth to a boil in a large pot. Add the basmati rice and stir. Reduce the heat to low, cover the pot, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  3. Heat the ghee or butter in a large pan over medium heat. Add the onion and sauté until it is soft and translucent, about 5 minutes.
  4. Add the garlic and ginger, and sauté for an additional minute.
  5. Add the marinated chicken to the pan and cook for 8-10 minutes, or until it is cooked through.
  6. When the rice is finished cooking, add the frozen peas, cilantro, and mint to the pot. Stir to combine.
