Ingredients:

1 cup basmati rice
2 cups milk
2 cups water
1 cup sugar
1/2 cup chopped almonds
2 tbsp dried rose petals
1 tsp cardamom powder
1 tsp ghee
A pinch of saffron (optional)

Instructions:

  1. Rinse the rice in cold water until the water runs clear.
  2. In a pot, add the milk, water, and rice. Bring the mixture to a boil and then reduce the heat to low. Let it simmer for 20-25 minutes, or until the rice is cooked and tender.
  3. Add the sugar, chopped almonds, dried rose petals, cardamom powder, and ghee to the pot. Stir until the sugar has dissolved.
  4. If using saffron, soak it in a tablespoon of warm milk and add it to the pot.
  5. Cook the kheer for an additional 5-7 minutes, or until the desired consistency is reached.
  6. Serve the kheer warm or chilled, garnished with chopped almonds and dried rose petals.

Notes:

You can adjust the amount of sugar to your liking.
You can also add more or less cardamom powder and rose petals, depending on your preference.
For a richer kheer, use full-fat milk instead of low-fat milk.
You can also add a bit of cream for a creamier texture.
