Ingredients:

8 ounces pasta of your choice
2 tablespoons olive oil
4 large shallots, thinly sliced
1 clove garlic, minced
1/2 cup dry white wine
1/2 cup chicken or vegetable broth
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper, to taste
Chopped fresh parsley, for garnish

Instructions:

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package instructions. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced shallots and cook, stirring frequently, until they are soft and caramelized, about 10-15 minutes.
  3. Add the minced garlic to the skillet and cook for an additional minute.
  4. Pour in the white wine and bring to a boil. Cook until the wine has reduced by half, about 2-3 minutes.
  5. Add the chicken broth and heavy cream to the skillet and bring to a boil. Reduce the heat to low and simmer for 5 minutes.
  6. Add the cooked pasta to the skillet and toss to coat with the sauce. Sprinkle with grated Parmesan cheese and season with salt and pepper to taste.
