Ratatouille Recipe

To make ratatouille, you will need the following

Ingredients:

2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
1 eggplant, diced
2 bell peppers (any color), diced
2 zucchini, diced
2 tomatoes, diced
2 tablespoons tomato paste
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions:

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  2. Add the eggplant, bell peppers, zucchini, and tomatoes to the pot. Stir in the tomato paste, basil, oregano, salt, and pepper.
  3. Reduce the heat to low and simmer, covered, until the vegetables are tender, about 30 minutes.
  4. Serve hot, garnished with fresh basil or parsley if desired.
