Microwave Coffee Cake Recipe

Ingredients:

1/2 cup (115 grams) unsalted butter, melted
1 cup (200 grams) granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups (190 grams) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup (120 milliliters) milk

For the topping:

1/2 cup (60 grams) all-purpose flour
1/2 cup (100 grams) brown sugar
1 teaspoon cinnamon
2 tablespoons unsalted butter, melted

Instructions:

  1. In a large microwave-safe bowl, whisk together the melted butter, sugar, eggs, and vanilla extract.
  2. In a separate bowl, mix together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, stirring until well combined.
  3. Stir in the milk to create a smooth and thick batter.
  4. In a small bowl, mix together the topping ingredients until well combined.
  5. Pour the batter into a microwave-safe cake pan or dish. Sprinkle the topping mixture over the top of the batter.
